For SOP, there is a setting that lets you decide whether the item posting accounts come from the item or the customer, but that changes the entire hierarchy, and it sounds like you just want it for a handful. The hierarchy doesn't go to item when the customer is blank under this option either so that still doesn't achieve what you want, unfortunately.
My other thought short of that is that if you have GP Power Tools, you could write a trigger on the windows you're wanting to impact and have it override the account settings for the customer/item combinations you're interested in.
Does that make sense at all?

For GL Accounts, my understanding is that there is an inheritance structure which starts at a Company level and then proceeds down to a Customer level then to the Item level and finally to an invoice level, where the lower or more granular the account is designated as taking precedence. One of my accountants is wondering if there is a way to set an exception to this hierarchy. (I don't think there is but if you have a workaround, I'd love to hear about it.)
Just to clarify, but she wants the Customer GL to override the Item one but only for a couple of items.
